How it works First, pull the wire out from the center of the machine and allow the handle to rotate until you have the height you need. Then, situate the cheese and hover the wire over where you would like to make the cut. Tighten the wire by turning the handle clockwise until it rests on top of the cheese. Turning the handle counterclockwise can bend and damage the wire. If you maintain the wire well and never turn the handle the wrong way, you can cut at least 100 Parmigiano Reggiano cheeses with one 0.8mm thick wire. Safety note: always use the wire with caution. It can easily cut fingers and hands.
